Whole Wheat Waffles

We wanted to have waffles the other day and were out of all-purpose flour but had some whole wheat pastry flour. After some searching, I put together this recipe, which is a mash-up of a couple different recipes. We liked the waffles – they were surprisingly fluffy and light for a whole wheat waffle!

Whole Wheat Waffles

Yield: 8 waffles (4"x4")

Ingredients

  • 3/4 cup Whole wheat pastry flour
  • 1/4 cup Cornstarch
  • 1/2 tsp Baking powder
  • 1 tsp Baking soda
  • 2 TBSP Brown sugar
  • 1/2 tsp Salt
  • 3/4 cup Buttermilk
  • 1/4 cup Milk
  • 1 Egg
  • 1/4 cup Canola oil
  • 1 tsp Vanilla
  • 1 TBSP Apple cider vinegar

Cooking Directions

  1. Preheat waffle iron.
  2. Combine all dry ingredients and mix well with a whisk.
  3. Add buttermilk, milk, egg, oil and vanilla, and mix well to combine.
  4. Right before pouring batter onto waffle iron, add vinegar and mix quickly.
  5. Make waffles as per the instructions for your specific waffle maker.
