{"id":7,"date":"2010-08-10T14:58:00","date_gmt":"2010-08-10T22:58:00","guid":{"rendered":"http:\/\/www.jsgreene.com\/beta\/wordpress\/?p=7"},"modified":"2010-08-10T14:58:00","modified_gmt":"2010-08-10T22:58:00","slug":"lime-vanilla-frozen-yogurt","status":"publish","type":"post","link":"https:\/\/www.jsgreene.com\/blog\/?p=7","title":{"rendered":">Lime-Vanilla Frozen Yogurt"},"content":{"rendered":"<p>&gt;A few weeks ago I made some vanilla ice cream. \u00a0In order to do that, I had to buy a vanilla bean, which are incredibly expensive (anyone want to go in with me on a bulk order?). \u00a0The package I bought had two, and I only had to use one for the ice cream. \u00a0I saw that I had this <a href=\"http:\/\/www.epicurious.com\/recipes\/food\/views\/Lime-Vanilla-Frozen-Yogurt-101768\">Lime-Vanilla Frozen Yogurt<\/a> recipe bookmarked from Epicurious, so I decided to make that last night before the extra vanilla bean I had went bad!<\/p>\n<p>The result: I think it&#8217;s really, really yummy (and easy to make). \u00a0It&#8217;s not super sweet, since you use plain ice cream. \u00a0I like the slightly tart combination of the vanilla bean and lime together. \u00a0Gavin thinks it&#8217;s ok&#8211;turns out he thinks limes have a little too much flavor if you add them to things.<\/p>\n<p>Here&#8217;s the <a href=\"http:\/\/www.epicurious.com\/recipes\/food\/views\/Lime-Vanilla-Frozen-Yogurt-101768\">recipe<\/a>, with my commentary:<\/p>\n<p>Two 32-oz containers of whole-milk plain yogurt<br \/>\n1 Vanilla bean<br \/>\n1 tsp finely grated fresh lime zest<br \/>\n6 TBSP fresh lime juice<br \/>\n1\/2 c. light corn syrup<br \/>\n3\/4 c. superfine granulated sugar<\/p>\n<p>Preparation:<\/p>\n<p>1. \u00a0In a cheesecloth-lines large sieve or colander set over a bowl, drain yogurt (covered and chilled, 12 hours). \u00a0Discard liquid in bowl. \u00a0<em><span style=\"color: #e69138;\">I did this one container at a time (colander set over a bowl), with two different types of plain yogurt, because I happened to have two different types, Mountain High and Yoplait (did you know Yoplait did plain? \u00a0I did not know, either). \u00a0I found that the Mountain High took forever to separate, because it kept on draining liquid. \u00a0The Yoplait barely drained anything&#8211;the consistencies were totally different! <\/span><\/em><\/p>\n<p>2. \u00a0With a knife, halve vanilla bean lengthwise and scrape out seeds (discard pod). \u00a0In a blender, puree together vanilla seeds, half of drained yogurt <em><span style=\"color: #e69138;\">(this was easy for me, since I kept my two yogurts separate)<\/span><\/em>, lime zest, lime juice <em><span style=\"color: #e69138;\">(I only used 5.5 TBSP, since I didn&#8217;t want to cut open a whole new lime)<\/span><\/em>, light corn syrup <em><span style=\"color: #e69138;\">(one of the commenters said she used simple syrup, which worked)<\/span><\/em> and superfine granulated sugar <em><span style=\"color: #e69138;\">(I just used plain white granulated sugar and it worked just fine)<\/span><\/em>.<\/p>\n<p>3. In a large bowl, stir together blended vanilla mixture and remaining yogurt.<\/p>\n<p>4.
