{"id":673,"date":"2012-03-27T06:00:45","date_gmt":"2012-03-27T14:00:45","guid":{"rendered":"http:\/\/www.jsgreene.com\/blog\/?p=673"},"modified":"2012-03-27T06:00:45","modified_gmt":"2012-03-27T14:00:45","slug":"soft-pretzels","status":"publish","type":"post","link":"https:\/\/www.jsgreene.com\/blog\/?p=673","title":{"rendered":"Soft pretzels"},"content":{"rendered":"<p>The other day Gavin requested that I make soft pretzels. \u00a0I was a little nervous about this because I&#8217;m not great with dough (and it&#8217;s such a commitment to make bread\/dough, especially if it doesn&#8217;t turn out&#8230;what a disappointment), but I stepped up to the challenge. \u00a0The result was that <a href=\"http:\/\/www.foodnetwork.com\/recipes\/alton-brown\/homemade-soft-pretzels-recipe\/index.html\">Alton Brown&#8217;s recipe<\/a> is pretty easy and doesn&#8217;t take forever to do! \u00a0Gavin ate these so quickly, that I had to make the recipe again later on that week.<\/p>\n<p>\n    <div class=\"hrecipe\">\n       <span class=\"item\">\n          <p id=\"recipeseo-title\" class=\"fn\">Soft Pretzels<\/p>\n       <\/span><p id=\"recipeseo-rating\" class=\"review hreview-aggregate\">\n          <span class=\"rating\"><\/span>\n       <\/p><p id=\"recipeseo-prep-time\">Prep Time: <span class=\"preptime\">30 minutes<span class=\"value-title\" title=\"PT30M\"><!-- --><\/span><\/span><\/p><p id=\"recipeseo-cook-time\">Cook Time: <span class=\"cooktime\">25 minutes<span class=\"value-title\" title=\"PT25M\"><!-- --><\/span><\/span><\/p><p id=\"recipeseo-total-time\">Total Time: <span class=\"duration\">1 hour, 55 minutes<span class=\"value-title\" title=\"PT1H55M\"><!-- --><\/span><\/span><\/p><p id=\"recipeseo-yield\">Yield: <span class=\"yield\">8 pretzels<\/span><\/p><p id=\"recipeseo-ingredients\">Ingredients<\/p><ul id=\"recipeseo-ingredients-list\"><li id=\"recipeseo-ingredient-0\" class=\"ingredient\"><span id=\"recipeseo-ingredient-0-amount\" class=\"amount\">1-1\/2 cups<\/span> <span id=\"recipeseo-ingredient-0-name\" class=\"name\">Warm water (between 100-110 F)<\/span><\/li><li id=\"recipeseo-ingredient-1\" class=\"ingredient\"><span id=\"recipeseo-ingredient-1-amount\" class=\"amount\">1 TBSP<\/span> <span id=\"recipeseo-ingredient-1-name\" class=\"name\">Sugar<\/span><\/li><li id=\"recipeseo-ingredient-2\" class=\"ingredient\"><span id=\"recipeseo-ingredient-2-amount\" class=\"amount\">2 tsp<\/span> <span id=\"recipeseo-ingredient-2-name\" class=\"name\">Kosher Salt<\/span><\/li><li id=\"recipeseo-ingredient-3\" class=\"ingredient\"><span id=\"recipeseo-ingredient-3-amount\" class=\"amount\">1 package<\/span> <span id=\"recipeseo-ingredient-3-name\" class=\"name\">Active Dry Yeast<\/span><\/li><li id=\"recipeseo-ingredient-4\" class=\"ingredient\"><span id=\"recipeseo-ingredient-4-amount\" class=\"amount\">4-1\/2 cups<\/span> <span id=\"recipeseo-ingredient-4-name\" class=\"name\">Flour<\/span><\/li><li id=\"recipeseo-ingredient-5\" class=\"ingredient\"><span id=\"recipeseo-ingredient-5-amount\" class=\"amount\">2 oz<\/span> <span id=\"recipeseo-ingredient-5-name\" class=\"name\">Butter, melted<\/span><\/li><li id=\"recipeseo-ingredient-6\" class=\"ingredient\"><span id=\"recipeseo-ingredient-6-amount\" class=\"amount\"><\/span> <span id=\"recipeseo-ingredient-6-name\" class=\"name\">Vegetable Oil<\/span><\/li><li id=\"recipeseo-ingredient-7\" class=\"ingredient\"><span id=\"recipeseo-ingredient-7-amount\" class=\"amount\">10 cups<\/span> <span id=\"recipeseo-ingredient-7-name\" class=\"name\">Water<\/span><\/li><li id=\"recipeseo-ingredient-8\" class=\"ingredient\"><span id=\"recipeseo-ingredient-8-amount\" class=\"amount\">2\/3 cup<\/span> <span id=\"recipeseo-ingredient-8-name\" class=\"name\">Baking Soda<\/span><\/li><li id=\"recipeseo-ingredient-9\" class=\"ingredient\"><span id=\"recipeseo-ingredient-9-amount\" class=\"amount\">1 <\/span> <span id=\"recipeseo-ingredient-9-name\" class=\"name\">Egg Yolk<\/span><\/li><li id=\"recipeseo-ingredient-10\" class=\"ingredient\"><span id=\"recipeseo-ingredient-10-amount\" class=\"amount\"><\/span> <span id=\"recipeseo-ingredient-10-name\" class=\"name\">Salt<\/span><\/li><\/ul><p id=\"recipeseo-instructions\">Cooking Directions<\/p><ol id=\"recipeseo-instructions-list\" class=\"instructions\"><li id=\"recipeseo-instruction-0\" class=\"instruction\">Combine the water, sugar and kosher salt in the bowl of a stand mixer and sprinkle the yeast on top.  Allow to sit for 5 minutes or until the mixture begins to foam.\r<\/li><li id=\"recipeseo-instruction-1\" class=\"instruction\">Add the flour and butter and, using the dough hook attachment, mix on low speed until well combined.  Change to medium speed and knead until the dough is smooth and pulls away from the side of the bowl, approximately 4-5 minutes.  Remove the dough from the bowl, clean the bowl and then oil it well with vegetable oil.  Return the dough to the bowl, cover with plastic wrap and sit in a warm place for approximately 50-55 minutes or until the dough has doubled in size.\r<\/li><li id=\"recipeseo-instruction-2\" class=\"instruction\">Preheat the oven to 450 F. Line 2 half-sheet pans with parchment paper and lightly brush with the vegetable oil. Set aside.\r<\/li><li id=\"recipeseo-instruction-3\" class=\"instruction\">Bring the 10 cups of water and the baking soda to a rolling boil in an 8-quart saucepan or roasting pan.  \r<\/li><li id=\"recipeseo-instruction-4\" class=\"instruction\">In the meantime, turn the dough out onto a slightly oiled work surface and divide into 8 equal pieces. Roll out each piece of dough into a 24-inch rope. Make a U-shape with the rope, holding the ends of the rope, cross them over each other and press onto the bottom of the U in order to form the shape of a pretzel. Place onto the parchment-lined half sheet pan.\r<\/li><li id=\"recipeseo-instruction-5\" class=\"instruction\">Place the pretzels into the boiling water, one at a time, for 30 seconds. Remove them from the water using a large flat spatula. Return to the half sheet pan.\r<\/li><li id=\"recipeseo-instruction-6\" class=\"instruction\">Beat egg yolk with 1 TBSP water in a small bowl.  Brush the top of each pretzel with the beaten egg yolk and water mixture and sprinkle with salt. \r<\/li><li id=\"recipeseo-instruction-7\" class=\"instruction\">Bake until dark golden brown in color, approximately 12 to 14 minutes.
