{"id":488,"date":"2011-07-12T07:00:47","date_gmt":"2011-07-12T15:00:47","guid":{"rendered":"http:\/\/www.jsgreene.com\/blog\/?p=488"},"modified":"2011-07-12T07:00:47","modified_gmt":"2011-07-12T15:00:47","slug":"chicken-enchiladas-with-green-salsa","status":"publish","type":"post","link":"https:\/\/www.jsgreene.com\/blog\/?p=488","title":{"rendered":"Chicken Enchiladas with Green Salsa"},"content":{"rendered":"<p>Have I got a great way for you to use your summer squash! \u00a0I found this <a href=\"http:\/\/www.myrecipes.com\/recipe\/chicken-enchiladas-with-green-salsa-10000001817849\/\">recipe from Real Simple<\/a> and really loved it. \u00a0Enchiladas with a fresh, summer-y twist. \u00a0What I particularly loved is that they are only in the oven for a short time (10 minutes) and that they don&#8217;t have any sauce on them&#8230;you make your own green salsa with tomatillos \u00a0and add as the sauce once the enchiladas are out of the oven. \u00a0It is a nice way to enjoy enchiladas in the summer!<\/p>\n<p><strong>Chicken Enchiladas with Green Salsa<\/strong><\/p>\n<p><strong>Prep time: <\/strong>20-30 minutes<br \/>\n<strong>Total:<\/strong> 40-ish minutes<br \/>\n<strong>Serves: <\/strong>4<\/p>\n<p><strong>Ingredients<br \/>\n<\/strong>4 TBSP canola oil<br \/>\n2 small zucchini, diced <em>(I used one small zucchini &amp; 1 patty pan)<\/em><br \/>\n1 small red onion, chopped<br \/>\n1 ear of corn, kernels cut off the cob<br \/>\nshredded rotisserie chicken<br \/>\n1-1\/2 cups (6 oz) shredded Monterey Jack cheese<br \/>\nKosher salt &amp; pepper<br \/>\n12 6-inch corn tortillas <em>(I think I used slightly more, like 16-ish?)<\/em><br \/>\n1 lb. tomatillos, husks removed<br \/>\n1 jalape\u00f1o, seeded <em>(I threw in the whole thing, sans stem, for a little more kick)<\/em><br \/>\n1 cup fresh cilantro leaves <em>(I estimated this)<\/em><br \/>\n1 TBSP fresh lime juice<br \/>\n1\/2 cup sour cream (optional)<\/p>\n<p><strong>Preparation<\/strong><\/p>\n<p>1. \u00a0Heat oven to 400 F. \u00a0Heat 1 tablespoon of the oil in a medium skillet over medium-high heat. \u00a0Add the zucchini, onion, and corn and cook, stirring, until the onion begins to soften, 3 to 5 minutes. \u00a0Transfer to a large bowl.<\/p>\n<p>2. \u00a0Add the chicken, cheese, 1 teaspoon salt, and 1\/4 teaspoon pepper. \u00a0Mix to combine.<\/p>\n<p>3. \u00a0Wipe out the skillet and heat the remaining oil over medium heat. \u00a0One at a time, cook the tortillas in the oil until softened, 10 to 15 seconds per side. \u00a0Transfer to a paper towel-lined plate.<\/p>\n<p>4. Divide the chicken mixture among the tortillas, roll them up, and place seam-side down in a large baking dish (I used a 13&#215;9&#8243; dish). \u00a0Bake until heated through, 8-10 minutes.<\/p>\n<p>5.
