{"id":21,"date":"2010-09-28T09:00:00","date_gmt":"2010-09-28T17:00:00","guid":{"rendered":"http:\/\/www.jsgreene.com\/beta\/wordpress\/?p=21"},"modified":"2010-09-28T09:00:00","modified_gmt":"2010-09-28T17:00:00","slug":"a-very-tasty-salad-jamies-cranberry-spinach-salad","status":"publish","type":"post","link":"https:\/\/www.jsgreene.com\/blog\/?p=21","title":{"rendered":">A very tasty salad: Jamie&#8217;s Cranberry Spinach Salad"},"content":{"rendered":"<p>&gt;With the <a href=\"http:\/\/www.latimes.com\/news\/local\/la-me-hottest-ever-20100928,0,329968.story\">record-breaking heat<\/a>, I most certainly did not want to cook something for dinner tonight. \u00a0Since we had a half-bag of spinach left over from a soup recipe I made late last week, I decided to make some sort of spinach salad.<\/p>\n<p>The spinach salads I had bookmarked to try didn&#8217;t really inspire me, so I googled spinach salad and found <a href=\"http:\/\/allrecipes.com\/\/Recipe\/jamies-cranberry-spinach-salad\">this recipe<\/a> (the bonus was that I didn&#8217;t even have to go shopping&#8211;had almost everything at home!). \u00a0Since the recipe serves 8, I used AllRecipe&#8217;s handy calculator to turn it into 2 servings (which I&#8217;ve posted below). \u00a0I also added chicken to make it a main course salad. Gavin, who rates all salads as 3\/5, said that this salad was &#8220;at least a 4,&#8221; which really shocked me!<\/p>\n<p>Below is my take on the salad (added chicken, omitted poppy seeds, a little extra onion).<\/p>\n<p><strong>Jamie&#8217;s Cranberry Spinach Salad<\/strong><\/p>\n<p><strong>Prep time: <\/strong>10 minutes<br \/>\n<strong>Total time:<\/strong> 20 minutes<br \/>\n<strong>Serves 2<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n3\/4 tsp butter <em><span style=\"color: #e69138;\">(I eyeballed this)<\/span><\/em><br \/>\n3 TBSP slivered almonds<br \/>\n1 boneless chicken breast<br \/>\nsalt &amp; pepper<br \/>\n1\/2 bag baby spinach<br \/>\n1\/2 c. dried cranberries <em><span style=\"color: #e69138;\">(I threw in a little more&#8230;maybe 2\/3 or 3\/4 cup, but this is not necessary)<\/span><\/em><br \/>\n1-1\/2 tsp toasted sesame seeds<br \/>\n2 TBSP white sugar<br \/>\n1\/2 tsp minced onion <em><span style=\"color: #e69138;\">(I eyeballed this and my guess was that it was more like 1 tsp, and it was just fine&#8230;not too oniony)<\/span><\/em><br \/>\n1\/8 tsp paprika<br \/>\n1 TBSP white wine vinegar<br \/>\n1 TBSP cider vinegar<br \/>\n2 TBSP canola oil<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>1. In a skillet, melt the butter over medium heat. \u00a0Cook and stir the almonds in butter until lightly toasted. Remove from heat and let cool.<\/p>\n<p>2. Salt and pepper the chicken breast on both sides. \u00a0In the same pan the almonds were cooked in, cook the chicken breast. <em><span style=\"color: #e69138;\">(I find cooking an average boneless chicken breast for 6 minutes per side gets me perfect results: safely cooked, but still juicy.)<\/span><\/em><\/p>\n<p>3. In a large bowl, combine the spinach with the toasted almonds and cranberries.<\/p>\n<p>4. In a smaller skillet, toast the sesame seeds. \u00a0<em><span style=\"color: #e69138;\">(If I were smart and had read the recipe closely from the beginning, I would have, in the same skillet, first toasted the sesame seeds, then melted the butter, toasted the almonds and then cooked the chicken. \u00a0Hopefully if you&#8217;re smart and reading this carefully before you begin, you will save yourself from washing 1 extra skillet!)<\/span><\/em><\/p>\n<p>5.
