{"id":15,"date":"2010-09-10T11:16:00","date_gmt":"2010-09-10T19:16:00","guid":{"rendered":"http:\/\/www.jsgreene.com\/beta\/wordpress\/?p=15"},"modified":"2010-09-10T11:16:00","modified_gmt":"2010-09-10T19:16:00","slug":"moroccan-chicken-with-fruit-and-olive-topping","status":"publish","type":"post","link":"https:\/\/www.jsgreene.com\/blog\/?p=15","title":{"rendered":">Moroccan Chicken with Fruit and Olive Topping"},"content":{"rendered":"<p>&gt;In going through my bookmarked recipes that I&#8217;ve recently made but haven&#8217;t filed, I found this recipe that I thought I&#8217;d share. \u00a0Both Gavin and I found it to be very tasty! \u00a0And since it&#8217;s a Cooking Light recipe, I guess it&#8217;s also better for you! \u00a0<em>(Recipe taken from <\/em><a href=\"http:\/\/find.myrecipes.com\/recipes\/recipefinder.dyn?action=displayRecipe&amp;recipe_id=1696627\"><em>here<\/em><\/a><em>)<\/em><\/p>\n<div><strong>Prep time:<\/strong> about 15 minutes<\/div>\n<div><strong>Total time:<\/strong> about a half hour<\/div>\n<div><strong>Serves 4<\/strong><\/div>\n<div><strong>Ingredients<\/strong><\/div>\n<div>1 TBSP olive oil, divided<\/div>\n<div>1\/2 tsp salt <em><span style=\"color: #f6b26b;\">(I use Diamond Kosher Salt, which I love)<\/span><\/em><\/div>\n<div>1\/4 tsp black pepper <em><span style=\"color: #f6b26b;\">(I eyeballed this with a pepper mill)<\/span><\/em><\/div>\n<div>1\/4 tsp dried thyme<\/div>\n<div>4 skinless, boneless chicken breasts<\/div>\n<div>1\/2 c. onion, chopped<\/div>\n<div>2 tsp bottled, minced garlic<\/div>\n<div>3\/4 c. dried mixed fruit <em><span style=\"color: #f6b26b;\">(Gavin and I have a lot of dried fruit in our pantry. \u00a0When I made this, I used a combination of: apricots, cherries, white peaches and prunes)<\/span><\/em><\/div>\n<div>1\/2 c. dry white wine<\/div>\n<div>1\/2 c. chicken broth<\/div>\n<div>1\/4 c. chopped pitted green olives <em><span style=\"color: #f6b26b;\">(I used some with pimentos in the olives and didn&#8217;t bother removing the pimentos)<\/span><\/em><\/div>\n<div>1\/8 tsp salt<\/div>\n<div>1\/8 tsp black pepper<\/div>\n<div><strong>Preparation<\/strong><\/div>\n<div>1. Heat 2 tsp oil in a large nonstick skillet over medium-high heat. \u00a0Sprinkle 1\/2 tsp salt, 1\/4 tsp pepper and thyme evenly over chicken <span style=\"color: #f6b26b;\"><em>(I didn&#8217;t bother measuring out&#8211;just eyeballed it)<\/em><\/span>. \u00a0Add chicken to the pan; cook 4 minutes on each side, or until done. \u00a0Remove from pan; cover and keep warm.<\/div>\n<div>2. Heat remaining 1 tsp oil in pan <span style=\"color: #f6b26b;\"><em>(use the same pan you cooked the chicken in)<\/em><\/span>. \u00a0Add onion to pan; saut\u00e9 2 minutes until tender. \u00a0Add garlic to pan; saut\u00e9 30 seconds. \u00a0Add fruit and remaining ingredients to pan; cook 5 minutes or until liquid almost evaporates.<\/div>\n<div>3.
