{"id":133,"date":"2011-02-09T08:45:41","date_gmt":"2011-02-09T16:45:41","guid":{"rendered":"http:\/\/www.jsgreene.com\/blog\/?p=133"},"modified":"2011-02-09T08:45:41","modified_gmt":"2011-02-09T16:45:41","slug":"massaged-kale-salad","status":"publish","type":"post","link":"https:\/\/www.jsgreene.com\/blog\/?p=133","title":{"rendered":"Massaged Kale Salad"},"content":{"rendered":"<p>Last summer my friend Emily sent me a recipe for <a title=\"Massaged Kale Salad\" href=\"http:\/\/vegandietitian.blogspot.com\/2009\/03\/massaged-kale-salad.html\">Massaged Kale Salad<\/a>. \u00a0Kale is not part of my typical grocery or even farmer&#8217;s market shopping. \u00a0I ignore it, mostly because I&#8217;m put off by the heartiness of the leaves. \u00a0But, I had to buy a bunch of kale for a soup that I was making, so I decided to make the salad recipe Emily sent me with the leftover kale. \u00a0The result: a delicious, delicious salad that I keep on thinking about. \u00a0Try it &#8212; you&#8217;ll like it!<\/p>\n<p><strong>Prep time: <\/strong>10-15 minutes<br \/>\n<strong>Serves:<\/strong> 6 <em>(when I made this, I halved everything, but I&#8217;ll post the full recipe here)<\/em><\/p>\n<p><strong>Ingredients<\/strong><br \/>\n1 bunch kale, de-stemmed and cut into bite-sized pieces<br \/>\n1\/2 tsp. kosher salt<br \/>\n1\/4 cup olive oil<br \/>\n2 tbsp. apple cider vinegar<br \/>\n1\/4 cup raisins, dried cranberries, dried cherries, or dried currants <em>(I used golden raisins)<\/em><br \/>\n1 small apple diced <em>(I love using fresh apple in salads &#8212; a nice, sweet crunch!) <\/em><br \/>\n1\/4 cup sunflower seeds, toasted <em>(I left these out, as Gavin is slightly allergic)<\/em><\/p>\n<p><strong>Preparation<\/strong><\/p>\n<p>1. Put kale into a large bowl. \u00a0Sprinkle salt on top and gently massage the salt into the kale. \u00a0Per the recipe, if you&#8217;re using the standard curly kale you might find in the grocery store, it might take a little longer and you might have to use a little more salt. \u00a0Eventually (a few minutes later), the kale softens\/wilts.<\/p>\n<p>2. Toss in the remainder of the ingredients. \u00a0Toss and serve!
